It sometimes works for me to press SysRq-S and then SysRq-U (sync &
remount read-only), then the panic message makes it into the logfiles
(depending on your syslog.conf).

But if the panic is really hard only serial console helps, or maybe
the Linux crash-dump patch http://lkcd.sourceforge.net/
(never tried that, though).
